You know what? The thing that really gets me about them not being canon? The way there are all these parallels that show how they should have been,
Like the way she became The Painted Lady. And he the Blue Spirit. I always thought that was really interesting, cinematically speaking that always seemed to be significant. The way they took up these identities that were/became heroes to people.
That had to be on purpose.
And then of course that last scene. Zuko taking the charge of electricity that would have killed her; that almost killed him too. The joy and relief and tears on Katara’s face when he moved. It all meant so much.
The thing is… where their stories didn’t align, they mirrored.
Just… a waterbender hero and a firebender villain (initially). Both lost their mothers young. Both ended up on the same path, a path that seems to have been destined, because if Zuko had made the choice earlier they would have started traveling the same road a bit sooner.
They had star crossed written ALL over their story.
