I’ve spent four years perfecting my baked mac and cheese recipe so here you go:
Baked Mac and Cheese
Yield:
about a whole casserole dish
Ingredients:
1 big ass box of elbow pasta (I would recommend bigger ones with ridges. texture really does matter)
4 Tablespoons of good butter
4 Tablespoons (or so) of all-purpose flour
About 2 teaspoons of dry mustard powder (optional but it gives it a good tang)
2 ½ cups of whole milk (WHOLE milk. NOT skim milk)
4-6 tablespoons of cream cheese, give or take
Salt
Pepper
Paprika
Garlic Powder
Onion Powder
Dried Parsley and/or Chives
3 Cups of shredded cheddar or mixed cheese (any cheese you like, just shredded)
Panko Bread Crumbs (preferably the seasoned kind)
INSTRUCTIONS:
Step 1: Preheat oven to 350°F. In a large boiling pot, begin to boil the box of pasta. Keep an eye on this. You want it to come out al dente (somewhat still undercooked), NOT soft. Give it 5-6 minutes on high heat. Make sure to salt it a bit. This is your only opportunity to season the inside of the pasta. Once boiled to al dente, set aside.
Step 2: In a deep, medium-sized skillet or sauce pan on medium heat, melt down the tablespoons of butter. As the butter melts, stir as you drop in the four tablespoons of all-purpose flour.
Step 3: Mix this until you get a light yellow mixture similar to a paste that’s bubbling slightly. If it’s too liquidy, add more flour.
Step 4: Once it’s like that, slowly pour in all the milk. Stir immediately, scraping all the butter/flour mixture off the bottom of the pan with a wooden spoon. Add in a teaspoon or two of mustard powder and stir again.
Step 5: Let that simmer for a minute as you get the cream cheese. Drop the cream cheese in ONE TABLESPOON AT A TIME. Mix thoroughly. Let it melt down completely. When the mixture has thickened to the consistency of like nacho cheese, stop adding more.
Step 6: Get about two cups of whatever shredded cheese you’re using and pour it into the mixture. I honestly don’t measure it out. Just think the cheesier, the better. Mix that in until it’s melted down. Add more cheese if you want, just make sure you have some leftover.
Step 7: Add in salt and pepper to taste. Pepper really compliments the taste of cheese, so don’t be afraid to add more than you would to a usual dish. Add in some garlic and onion powder and a dash of paprika. You may also want to add in some cayenne here if you like some spice. Also add in about a tablespoon-full of dried parsley/chives. Mix.
Step 8: Drain the pasta. Get the drained pasta and pour it into the skillet, mixing it in thoroughly with the cheese sauce.
Step 9: Once mixed, pour the mac and cheese into a greased casserole dish. Top with a good layer of the rest of your shredded cheese and another good layer of your panko breadcrumbs.
Step 10: Put into the oven and bake for about 25 minutes or until golden brown on top. Let cool then slice, and serve.
This Mac and Cheese literally never fails me and you can tweak it however you want- it can adjust super easy if you want to add in bacon or sausage or peppers or spinach or whatever.
